Ingredients

  • ½ medium avocado, pitted and peeled
  • ½ cup Italian parsley leaves
  • ½ cup fresh basil leaves
  • ¼ cup chopped chives
  • 1 small garlic clove
  • ¾ cup extra virgin olive oil
  • ½ cup water, plus more if needed
  • ¼ cup freshly squeezed lemon juice
  • 2 tablespoons tahini
  • 1 teaspoon Diamond Crystal kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Combine all ingredients in a high-speed blender or food processor.
  2. Blend on high until smooth and vibrant green.
  3. Taste and adjust seasoning as needed.
  4. If too thick, add more water to reach desired consistency.
  5. Serve the dressing on your favorite salads or as a dip.
