Instructions
- Add the avocado, parsley, ¼ cup water, olive oil, lemon juice, lemon zest, garlic, salt, and black pepper to a blender.
- Blend until smooth, scraping down the sides as needed.
- If the dressing is too thick, add additional water, one tablespoon at a time, until desired consistency is reached.
- Adjust taste by adding honey or more salt and lemon juice as needed.
- Store leftover dressing in the fridge for up to 4 days.
