Ingredients

  • 1 large avocado
  • ½ cup fresh parsley
  • ¼ to ½ cup water
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 clove garlic
  • ¼ teaspoon salt
  • to taste black pepper
  • to taste honey (optional)

Instructions

  1. Add the avocado, parsley, ¼ cup water, olive oil, lemon juice, lemon zest, garlic, salt, and black pepper to a blender.
  2. Blend until smooth, scraping down the sides as needed.
  3. If the dressing is too thick, add additional water, one tablespoon at a time, until desired consistency is reached.
  4. Adjust taste by adding honey or more salt and lemon juice as needed.
  5. Store leftover dressing in the fridge for up to 4 days.
