Ingredients

  • 1 clove garlic
  • 1 cup packed avocado flesh (about 2 small avocados)
  • 7-8 tbsp water
  • 5 tbsp apple cider vinegar
  • 3-4 tbsp fresh lemon juice
  • ¼ cup extra virgin olive oil
  • ½ cup packed fresh basil leaves
  • ½ cup packed fresh parsley
  • ½ cup packed green onion (dark green part only)
  • 1 tsp kosher salt
  • 1 pinch cayenne (optional)
  • ½ tsp agave (or sweetener of choice)

Instructions

  1. Process the garlic in a food processor until finely chopped.
  2. Add water, olive oil, avocado, herbs, and green onion, then process until smooth.
  3. Slowly add lemon juice and apple cider vinegar, tasting as you go to adjust tanginess.
  4. Add salt to taste, then enjoy the dressing.
  5. Store in an airtight container in the fridge for up to 5 days.
