Easy Vegan Green Goddess Dressing

Ingredients

  • ½ medium ripe avocado
  • ½ cup chopped green onion
  • cup torn flat leaf parsley
  • 3 tablespoons torn leafy herbs (basil, dill, mint, cilantro)
  • 2 tablespoons chopped chives
  • cup canned coconut milk or light coconut milk
  • 1 teaspoon minced garlic
  • 2 teaspoons lemon juice
  • 2 teaspoons tamari (or coconut aminos)
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 to 3 tablespoons extra virgin olive oil (optional)

Instructions

  1. Combine all ingredients except salt, pepper, and oil in a food processor or blender and process until smooth.
  2. Add salt and pepper, blend again, and adjust seasonings to taste.
  3. If a thinner consistency is desired, drizzle in olive oil while blending until desired thickness is achieved.
  4. Use immediately or store in a sealed container in the refrigerator for up to 3-4 days.
