Hummus & Grilled Vegetable Pizza

Ingredients

The pizza base

  • 1 large pizza dough

The toppings

  • ½ recipe hummus
  • 1 small zucchini
  • 1 small summer squash
  • 1 medium portabello mushroom cap
  • ½ small red onion
  • jar roasted red peppers
  • 2 Tbsp olive oil
  • to taste salt
  • to taste pepper
  • ½ tsp crushed red pepper (optional)
  • 1 Tbsp cornmeal

Instructions

  1. Prepare and knead the pizza dough, then let it rise in a warm place for about an hour.
  2. While the dough is rising, make the hummus and refrigerate it until needed.
  3. Wash and slice the vegetables into half-inch thick pieces, then toss the squash with olive oil, salt, and pepper.
  4. Grill the squash for about 5 minutes, then grill the portabello and onion in the same manner.
  5. Once grilled, cut the vegetables into bite-sized pieces and slice the roasted red peppers into strips.
  6. Preheat the oven to 450°F and prepare a pizza pan with non-stick spray and cornmeal.
  7. Punch down the risen dough and stretch it into a 16-inch circle.
  8. Spread half of the hummus over the dough, then top with the grilled vegetables.
  9. Bake the pizza for 20-25 minutes until the crust is golden brown.
  10. Cut into 8 pieces and serve.
