Instructions
- Prepare and knead the pizza dough, then let it rise in a warm place for about an hour.
- While the dough is rising, make the hummus and refrigerate it until needed.
- Wash and slice the vegetables into half-inch thick pieces, then toss the squash with olive oil, salt, and pepper.
- Grill the squash for about 5 minutes, then grill the portabello and onion in the same manner.
- Once grilled, cut the vegetables into bite-sized pieces and slice the roasted red peppers into strips.
- Preheat the oven to 450°F and prepare a pizza pan with non-stick spray and cornmeal.
- Punch down the risen dough and stretch it into a 16-inch circle.
- Spread half of the hummus over the dough, then top with the grilled vegetables.
- Bake the pizza for 20-25 minutes until the crust is golden brown.
- Cut into 8 pieces and serve.
