Pita Pizza with Hummus

Ingredients

The base

  • 4 pieces whole wheat pita bread rounds

The sauce

  • 6-8 tablespoons roasted garlic hummus

The toppings

  • 1 medium zucchini squash, cut into ¼-inch slices
  • 1 small yellow summer squash, cut into ¼-inch slices
  • 3 pieces tomatoes, sliced ¼-inch thick
  • 2 tablespoons green goddess dressing
  • ¾ cup shredded mozzarella cheese
  • to taste chopped fresh parsley or basil

Instructions

  1. Preheat the oven to 425°F.
  2. Arrange the pitas on a baking sheet and spread each with roasted garlic hummus.
  3. In a bowl, toss the zucchini and yellow squash with green goddess dressing, then add the tomatoes and toss gently.
  4. Arrange the veggie mixture on top of the hummus-covered pitas and sprinkle with mozzarella cheese.
  5. Bake for about 8 minutes until the pitas are lightly crisp and the cheese is melted.
  6. Let cool slightly, garnish with fresh herbs, slice, and serve.
