Ingredients

The pizza

  • 4 pieces whole-wheat pita breads
  • 1 piece yellow bell pepper
  • 3 oz fresh mozzarella
  • to taste fresh basil

The sauce

  • ¼ tsp olive oil
  • 1 piece yellow onion
  • 2 cloves garlic
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp red pepper flakes
  • 1 piece bay leaf
  • ½ can whole peeled tomatoes
  • ¼ cup tomato paste

Instructions

  1. Preheat the oven to 350°F.
  2. Heat olive oil in a saucepan over medium heat and sauté onion and garlic until fragrant.
  3. Add the remaining sauce ingredients and bring to a boil, then reduce heat and let simmer for about 35 minutes until thick.
  4. On baking sheets, assemble the pita bread and spread about ⅓ cup of sauce on each.
  5. Add bell pepper slices and sprinkle with mozzarella cheese.
  6. Bake for approximately 20 minutes until the cheese has melted and the crust is slightly browned.
  7. Remove from the oven, sprinkle with fresh basil, cut into slices, and enjoy.
