Ingredients

Dough Ingredients

  • 1 cup water, heated to 110 degrees
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon honey or sugar
  • 1 envelope rapid-rise or instant yeast
  • cups white whole wheat flour or regular whole wheat flour
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon fine salt

Toppings

  • 1 cup pizza sauce or crushed tomatoes
  • 2 to 3 cups shredded low-moisture part-skim mozzarella cheese
  • as desired additional toppings

Instructions

  1. Preheat the oven to 500°F with a rack in the upper third.
  2. Whisk warm water, olive oil, honey, and yeast in a bowl and let it proof for 5 minutes.
  3. In a food processor, pulse flour, Parmesan, and salt until combined. Gradually add the water mixture and process until a shaggy ball forms.
  4. Transfer the dough to a floured surface and knead a few times until it comes together, then divide it in half.
  5. Roll each half into a round about 11 inches in diameter on a floured surface.
  6. Transfer one round to a baking sheet lined with parchment paper, brush the edges with olive oil, and add sauce, cheese, and desired toppings.
  7. Bake until the crust and cheese are lightly golden, about 10-12 minutes. Repeat with the remaining dough.
