Instructions
- Prepare the soaker by mixing whole wheat flour, sea salt, and water in a bowl, cover it, and refrigerate overnight.
- For the biga, mix whole wheat flour, gluten flour, rapid-rise yeast, and water until a ball forms, knead briefly, and refrigerate overnight.
- Remove the biga from the fridge 2-3 hours before making the final dough to let it warm up.
- Combine the soaker and biga on a floured surface, chop into pieces, and add the final dough ingredients.
- Mix with a dough hook until cohesive, adjusting with more flour or water as needed.
- Shape the dough into a ball, coat with olive oil, and let it rise for 1 hour.
- Preheat the oven to 500ºF and prepare to shape the dough.
- Divide the dough into 4 pieces, shape into balls, and roll each out to a 12-inch diameter.
- Transfer the dough to a pizza pan, add toppings, and bake for 10-15 minutes.
