Ingredients

The Soaker

  • cups whole wheat flour
  • ½ tsp sea salt
  • ¾ cup plus 2 tbsp water

The Biga

  • cups whole wheat flour
  • 2 tbsp gluten flour (optional)
  • ½ tsp rapid-rise yeast
  • ¾ cup plus 2 tbsp water

Final Dough

  • ¼ cup whole wheat flour
  • ¾ tbsp salt
  • tsp rapid-rise yeast
  • tsp honey or 1 tbsp blackstrap molasses
  • 1 tbsp olive oil
  • extra whole wheat flour for adjustments

Instructions

  1. Prepare the soaker by mixing whole wheat flour, sea salt, and water in a bowl, cover it, and refrigerate overnight.
  2. For the biga, mix whole wheat flour, gluten flour, rapid-rise yeast, and water until a ball forms, knead briefly, and refrigerate overnight.
  3. Remove the biga from the fridge 2-3 hours before making the final dough to let it warm up.
  4. Combine the soaker and biga on a floured surface, chop into pieces, and add the final dough ingredients.
  5. Mix with a dough hook until cohesive, adjusting with more flour or water as needed.
  6. Shape the dough into a ball, coat with olive oil, and let it rise for 1 hour.
  7. Preheat the oven to 500ºF and prepare to shape the dough.
  8. Divide the dough into 4 pieces, shape into balls, and roll each out to a 12-inch diameter.
  9. Transfer the dough to a pizza pan, add toppings, and bake for 10-15 minutes.
