Whole Wheat Pizza Dough

Ingredients

  • cups warm water
  • 2 envelopes active dry yeast
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • 2 cups white whole wheat flour
  • 2 cups all purpose flour
  • 3 tablespoons vital wheat gluten
  • teaspoons kosher salt

Instructions

  1. Combine warm water, yeast, olive oil, and honey in a bowl.
  2. Add white whole wheat flour, part of the all-purpose flour, vital wheat gluten (if using), and salt. Mix and gradually add the remaining flour until a soft dough forms.
  3. Knead the dough until smooth and elastic, then cover and let rise for 30 minutes.
  4. Divide the dough into two balls. Use, refrigerate, or freeze as desired.
  5. To bake, roll out the dough, top with sauce and toppings, then bake at 450°F until golden.
