Instructions
- Preheat the oven to 400°F.
- Make the pesto by blending basil, walnuts, garlic, lemon juice, Parmesan, salt, and pepper, then drizzle in olive oil until smooth.
- Heat olive oil in a skillet and sauté the peppers and zucchini for 4-5 minutes, then add cherry tomatoes and cook for another 1-2 minutes.
- Spread 2 tablespoons of pesto on each pita, sprinkle with 1 tablespoon of mozzarella, and top with sautéed vegetables and another tablespoon of mozzarella.
- Bake on the middle oven rack for 8-10 minutes until the cheese is melted and the pita is crisp.
