Ingredients

Homemade Basil Pesto

  • 2 cups basil
  • ½ cup walnut pieces
  • 3 cloves garlic
  • 2 tablespoons lemon juice
  • ½ cup shredded Parmesan
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper
  • cup extra virgin olive oil

Pita Pizzas

  • 5 whole whole wheat pitas
  • 1 tablespoon olive oil
  • 1 medium red bell pepper
  • 1 medium orange bell pepper
  • 1 medium zucchini
  • ¼ teaspoon salt
  • 1 cup cherry tomatoes
  • ½ cup shredded mozzarella
  • 2 tablespoons shredded mozzarella

Instructions

  1. Preheat the oven to 400°F.
  2. Make the pesto by blending basil, walnuts, garlic, lemon juice, Parmesan, salt, and pepper, then drizzle in olive oil until smooth.
  3. Heat olive oil in a skillet and sauté the peppers and zucchini for 4-5 minutes, then add cherry tomatoes and cook for another 1-2 minutes.
  4. Spread 2 tablespoons of pesto on each pita, sprinkle with 1 tablespoon of mozzarella, and top with sautéed vegetables and another tablespoon of mozzarella.
  5. Bake on the middle oven rack for 8-10 minutes until the cheese is melted and the pita is crisp.
