Ingredients

Basil Pesto

  • 1 cup fresh basil leaves
  • 3 Tablespoons pine nuts
  • 3 Tablespoons parmesan cheese
  • 2 small cloves garlic
  • 3 Tablespoons olive oil
  • ½ teaspoon fresh lemon juice
  • teaspoon salt
  • to taste freshly ground black pepper

Pizza

  • ½ recipe homemade pizza dough
  • 1 Tablespoon olive oil
  • 1 Tablespoon cornmeal
  • cups shredded mozzarella cheese
  • ½ cup halved cherry tomatoes
  • ¼ cup chopped fresh basil
  • optional extra pesto
  • optional shredded parmesan cheese
  • optional red pepper flakes

Instructions

  1. Make the pesto by blending basil, pine nuts, parmesan, and garlic in a food processor, then add oil, lemon juice, and salt until smooth.
  2. Prepare the pizza dough and preheat the oven to 475°F (246°C).
  3. Grease a baking sheet with olive oil and sprinkle with cornmeal.
  4. Shape the dough into a 12-inch circle and place it on the prepared pan.
  5. Push dents into the dough to prevent bubbling and brush with olive oil.
  6. Spread the pesto over the dough, then top with mozzarella and tomatoes, sprinkling with salt and pepper.
  7. Bake for 14-15 minutes until the crust is golden brown.
  8. Remove from oven and garnish with fresh basil, extra pesto, red pepper flakes, and parmesan if desired.
  9. Slice and serve immediately.
