Instructions
- Prepare garlic oil by stirring olive oil and garlic powder in a small bowl and set aside.
- Finely mince fresh parsley leaves and combine with minced garlic, grated Parmesan, salt, pepper, and optional red pepper flakes.
- Add lemon juice and olive oil to the parsley mixture until it reaches a drizzling consistency, then set aside.
- Preheat the oven to 500ºF and move the rack to the top position.
- Slice the tomatoes and fresh mozzarella.
- Roll or stretch the pizza dough into a 14-16" disc and place it on a baking sheet.
- Brush the garlic oil over the dough, then arrange the tomato slices and mozzarella on top.
- Bake the pizza for 10 minutes until the crust is golden and cheese is melted.
- Drizzle the parsley pesto over the pizza, slice into eight pieces, and serve.
