Ingredients

Garlic Oil

  • 1 Tbsp olive oil
  • ¼ tsp garlic powder

Parsley Pesto

  • 1 cup fresh parsley leaves, minced
  • 1 clove garlic, minced or crushed
  • 1 Tbsp grated Parmesan
  • ¼ tsp salt
  • to taste freshly cracked pepper
  • a pinch red pepper flakes (optional)
  • Tbsp lemon juice
  • 3 Tbsp olive oil

Pizza

  • 1 14-16" pizza dough
  • 4 oz fresh mozzarella
  • 2 pieces Roma tomatoes

Instructions

  1. Prepare garlic oil by stirring olive oil and garlic powder in a small bowl and set aside.
  2. Finely mince fresh parsley leaves and combine with minced garlic, grated Parmesan, salt, pepper, and optional red pepper flakes.
  3. Add lemon juice and olive oil to the parsley mixture until it reaches a drizzling consistency, then set aside.
  4. Preheat the oven to 500ºF and move the rack to the top position.
  5. Slice the tomatoes and fresh mozzarella.
  6. Roll or stretch the pizza dough into a 14-16" disc and place it on a baking sheet.
  7. Brush the garlic oil over the dough, then arrange the tomato slices and mozzarella on top.
  8. Bake the pizza for 10 minutes until the crust is golden and cheese is melted.
  9. Drizzle the parsley pesto over the pizza, slice into eight pieces, and serve.
