Ingredients

The dough

  • 1 pound pizza dough
  • cornmeal for stretching the dough

The pesto

  • ½ cup olive oil
  • basil pesto

The toppings

  • 4 ounces fresh mozzarella cheese
  • roasted cherry tomatoes or sun-dried tomatoes
  • fresh basil
  • red pepper flakes

Instructions

  1. Preheat the oven to 500°F.
  2. Dust a baking sheet with cornmeal and stretch the pizza dough into a large oval.
  3. Poke holes all over the dough with a fork and bake for 5 minutes.
  4. Remove the crust from the oven and brush with 2 tablespoons of pesto.
  5. Top with mozzarella and tomatoes, then bake for another 6 to 8 minutes until browned.
  6. Add more dollops of pesto, fresh basil, and red pepper flakes before slicing and serving.
