Instructions
- Preheat the oven to 425ºF.
- Brush the top of the pita with olive oil, reserving some for later.
- Spread the jam on top of the pita, avoiding the edges.
- Sprinkle pistachios on top and brush them lightly with the remaining olive oil.
- Place the pita on a baking sheet and bake for 5 to 10 minutes until the jam is bubbly and the pistachios are golden brown.
- Remove from the oven and let cool for a few minutes before slicing into four pieces.
