Instructions
- Combine warm water, yeast, and sugar in a small bowl and let sit for 15 minutes until foamy.
- In a stand mixer or by hand, mix olive oil, salt, and flour until smooth and elastic, about 2 to 3 minutes.
- Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place until doubled in size, about 1 hour.
- Preheat the oven to 500 degrees and place a pizza stone or cast-iron skillet inside.
- Punch down the dough and divide it into 4 equal pieces, rolling each into a ball and letting them rest for 10 minutes.
- Roll each ball into a ¼-inch thick circle, about 8 inches wide.
- Place the rolled pitas into the hot skillet or stone without touching and bake for 3 to 4 minutes until puffed and golden brown.
- Remove the baked pitas and cover them with a kitchen towel to keep warm.
