Ingredients

  • ¾ cup warm water
  • 2 ¼ teaspoon active dry yeast
  • 4 teaspoon granulated sugar
  • 3 ¾ cups bread flour
  • 1 ½ teaspoon sea salt
  • 3 tablespoon extra-virgin olive oil
  • ¾ cup Greek yogurt

Instructions

  1. Combine warm water, yeast, and 1 teaspoon of sugar in a bowl and let it sit until foamy.
  2. Mix bread flour, salt, and remaining sugar in a stand mixer bowl.
  3. Add the yeast mixture, olive oil, and Greek yogurt to the dry ingredients and mix until soft and slightly sticky.
  4. Lightly oil a bowl, place the dough inside, cover, and let it rise in a warm place for 2 hours.
  5. Preheat the oven to 500°F and line baking sheets with parchment paper.
  6. Turn the dough onto a floured surface, divide into 12 pieces, and let rise for an additional 20 minutes.
  7. Roll each piece into circles ¼ to ½ inch thick and place on baking sheets.
  8. Bake one sheet at a time for 7-9 minutes until puffy and lightly browned, then cool on a wire rack.
