Instructions
- Combine warm water, yeast, and 1 teaspoon of sugar in a bowl and let it sit until foamy.
- Mix bread flour, salt, and remaining sugar in a stand mixer bowl.
- Add the yeast mixture, olive oil, and Greek yogurt to the dry ingredients and mix until soft and slightly sticky.
- Lightly oil a bowl, place the dough inside, cover, and let it rise in a warm place for 2 hours.
- Preheat the oven to 500°F and line baking sheets with parchment paper.
- Turn the dough onto a floured surface, divide into 12 pieces, and let rise for an additional 20 minutes.
- Roll each piece into circles ¼ to ½ inch thick and place on baking sheets.
- Bake one sheet at a time for 7-9 minutes until puffy and lightly browned, then cool on a wire rack.
