Homemade Pita Bread

Instructions
- Combine warm water, sugar, and yeast in a small bowl and let sit until foamy.
- Add olive oil to the yeast mixture.
- In a large bowl, mix 1 cup of flour and salt, then add the yeast mixture and stir.
- Continue adding flour until a loose ball forms that can't be stirred with a spoon.
- Knead the dough on a floured surface, adding more flour until it is soft and pliable.
- Place the dough in an oiled bowl, cover, and let rise for one hour or until doubled in size.
- Punch down the dough, stretch it into a log, and cut it into 8 equal pieces.
- Shape each piece into a ball and roll it out into a 6-inch circle.
- Preheat the oven to 500°F and let the dough circles rest.
- Bake the dough circles on a wire rack in the oven until they puff up, then remove and cover with a damp cloth.
