Homemade Pita Bread

Instructions
- Combine warm water, yeast, and 1 teaspoon of sugar; let it foam for about 5 minutes.
- In a large bowl, mix flour, salt, and remaining sugar; add the yeast mixture, oil, and yogurt.
- Knead the dough until soft and slightly sticky, for about 7 to 10 minutes.
- Transfer the dough to an oiled bowl, cover, and let it rise until doubled in size, about 2 hours.
- Preheat the oven to 500°F and line two baking sheets with parchment paper.
- Divide the dough into 12 equal balls and let them rest for 20 minutes.
- Roll each ball into circles about ¼ to ½-inch thick.
- Bake the circles on the prepared sheets one at a time until puffy and lightly browned, checking at 5 minutes.
- Transfer the baked pitas to a wire rack to cool.
