Ingredients

  • ¾ cup warm water
  • 1 package active dry yeast (2¼ teaspoons)
  • 1 teaspoon sugar
  • 1 tablespoon sugar
  • cups bread flour
  • teaspoons sea salt
  • 3 tablespoons extra-virgin olive oil
  • ¾ cup whole-milk Greek yogurt

Instructions

  1. Combine warm water, yeast, and 1 teaspoon of sugar; let it foam for about 5 minutes.
  2. In a large bowl, mix flour, salt, and remaining sugar; add the yeast mixture, oil, and yogurt.
  3. Knead the dough until soft and slightly sticky, for about 7 to 10 minutes.
  4. Transfer the dough to an oiled bowl, cover, and let it rise until doubled in size, about 2 hours.
  5. Preheat the oven to 500°F and line two baking sheets with parchment paper.
  6. Divide the dough into 12 equal balls and let them rest for 20 minutes.
  7. Roll each ball into circles about ¼ to ½-inch thick.
  8. Bake the circles on the prepared sheets one at a time until puffy and lightly browned, checking at 5 minutes.
  9. Transfer the baked pitas to a wire rack to cool.
