Ingredients

  • 1 ¼ cup warm water
  • 2 teaspoons dry yeast
  • ½ teaspoon sugar
  • 3 cups all-purpose flour
  • 1 ¼ teaspoons salt
  • 2 teaspoons olive oil

Instructions

  1. Combine warm water, yeast, and sugar in a bowl and let it sit until frothy.
  2. Add ¼ cup of flour and whisk. Let it sit in a warm place for about 15 minutes.
  3. Mix in salt, olive oil, and most of the flour, reserving ½ cup.
  4. Stir until a shaggy dough forms, then knead lightly for a few minutes.
  5. Cover the dough and let it rest for 10 minutes, then knead again for 2 minutes.
  6. Place the dough in a clean bowl, cover, and let it rise until doubled in size, about 1 hour.
  7. Preheat the oven to 475°F and place a baking sheet inside.
  8. Divide the dough into 8 pieces and shape each into a ball.
  9. Roll out each ball into a flat disk about 8 inches in diameter.
  10. Place the rolled dough on the hot baking sheet and bake until puffed, about 2 minutes.
  11. Flip the pita and bake for an additional minute until lightly browned.
  12. Remove and cover with a towel to keep warm.
