Pita Bread

Instructions
- Combine warm water, yeast, and sugar in a bowl and let it sit until frothy.
- Add ¼ cup of flour and whisk. Let it sit in a warm place for about 15 minutes.
- Mix in salt, olive oil, and most of the flour, reserving ½ cup.
- Stir until a shaggy dough forms, then knead lightly for a few minutes.
- Cover the dough and let it rest for 10 minutes, then knead again for 2 minutes.
- Place the dough in a clean bowl, cover, and let it rise until doubled in size, about 1 hour.
- Preheat the oven to 475°F and place a baking sheet inside.
- Divide the dough into 8 pieces and shape each into a ball.
- Roll out each ball into a flat disk about 8 inches in diameter.
- Place the rolled dough on the hot baking sheet and bake until puffed, about 2 minutes.
- Flip the pita and bake for an additional minute until lightly browned.
- Remove and cover with a towel to keep warm.
