Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon instant yeast
  • 165 grams lukewarm water
  • 1 tablespoon olive oil

Instructions

  1. Whisk together flour, salt, and instant yeast in a large bowl.
  2. Add lukewarm water and olive oil, then stir until a shaggy dough forms.
  3. Knead briefly in the bowl until the flour is absorbed, about 30 seconds.
  4. Drizzle olive oil over the dough, cover with a cloth, and let rise in a warm place for 1.5 hours.
  5. Preheat the oven with a Baking Steel or stone at 550ºF.
  6. Turn out the dough onto a floured surface and divide into 6 equal portions.
  7. Shape each portion into a ball and let rest for 30 minutes.
  8. Roll each ball into a 6-inch round, then let rest for another 15 minutes.
  9. Bake the rounds on the preheated surface for 2-3 minutes until lightly golden.
  10. Transfer baked pita to a towel-lined bowl and cover until ready to serve.
