Instructions
- Whisk together flour, salt, and instant yeast in a large bowl.
- Add lukewarm water and olive oil, then stir until a shaggy dough forms.
- Knead briefly in the bowl until the flour is absorbed, about 30 seconds.
- Drizzle olive oil over the dough, cover with a cloth, and let rise in a warm place for 1.5 hours.
- Preheat the oven with a Baking Steel or stone at 550ºF.
- Turn out the dough onto a floured surface and divide into 6 equal portions.
- Shape each portion into a ball and let rest for 30 minutes.
- Roll each ball into a 6-inch round, then let rest for another 15 minutes.
- Bake the rounds on the preheated surface for 2-3 minutes until lightly golden.
- Transfer baked pita to a towel-lined bowl and cover until ready to serve.
