Instructions
- Preheat the oven to 450°F and prepare a baking sheet with a silicone liner or oil.
- In a bowl, combine flour, baking powder, and salt, and whisk together.
- Add the Greek yogurt and mix until combined, forming small crumbles.
- Knead the dough lightly on a floured surface until tacky but not sticky.
- Divide the dough into 4 equal balls and roll each into thin ovals.
- Place the rolled dough on the prepared baking sheet.
- Top the dough with spinach, mozzarella, and tomatoes, leaving space for the egg.
- Gently break an egg into the center of each dough and add bacon on top.
- Bake for 10 to 12 minutes until the crust is golden and the egg is set.
