Ingredients

The dough

  • 1 cup all purpose or white whole wheat flour
  • teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 cup non-fat Greek yogurt

The toppings

  • handful baby spinach
  • 2 ounces shredded mozzarella cheese
  • 8 cherry tomatoes, sliced
  • 4 large eggs
  • 2 strips cooked center cut bacon, chopped

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet with a silicone liner or oil.
  2. In a bowl, combine flour, baking powder, and salt, and whisk together.
  3. Add the Greek yogurt and mix until combined, forming small crumbles.
  4. Knead the dough lightly on a floured surface until tacky but not sticky.
  5. Divide the dough into 4 equal balls and roll each into thin ovals.
  6. Place the rolled dough on the prepared baking sheet.
  7. Top the dough with spinach, mozzarella, and tomatoes, leaving space for the egg.
  8. Gently break an egg into the center of each dough and add bacon on top.
  9. Bake for 10 to 12 minutes until the crust is golden and the egg is set.
