Ingredients

The crust

  • 1 pizza crust either homemade or store-bought

The toppings

  • 1 jar sugar-free tomato based pizza sauce
  • 2 big handfuls greens (arugula or spinach)
  • 1 package pepperoni (sugar-free)
  • ½ lb cooked breakfast sausage
  • 1 cup mushrooms (sliced)
  • ¼ piece onion (sliced)
  • 3-4 eggs large
  • 2 tbsp fresh basil (chopped)

Instructions

  1. Prepare the pizza crust or take a frozen one out of the freezer.
  2. If needed, prepare the breakfast sausage or break up pre-cooked sausage.
  3. Preheat the oven to 400°F.
  4. Place the crust on a baking sheet or pizza stone if homemade, or directly on the oven rack if using a store-bought crust.
  5. Layer the toppings starting with the tomato sauce, then add greens, pepperoni, sausage, mushrooms, onion, and finally crack the eggs on top.
  6. Bake in the oven for about 20 minutes, or until the eggs are cooked to your liking. If necessary, broil for an additional minute or two.
  7. Remove from the oven, let cool for a few minutes, slice, and serve.
