Ingredients

Pizza Crust

  • 12 ounces plain Greek yogurt
  • 1 ¾ cups self-rising flour

  • a drizzle olive oil

Gravy

  • 2 tablespoons butter
  • ½ pound ground turkey or pork breakfast sausage
  • 2 cloves garlic
  • 2 tablespoons all-purpose flour
  • ½ cup milk
  • to taste coarse salt and ground black pepper

Pizza Toppings

  • 4 large eggs, scrambled
  • 1 cup fresh baby spinach
  • ½ cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F and place the pizza stone in the oven.
  2. Mix Greek yogurt, self-rising flour, and a pinch of salt in a stand mixer until a smooth dough forms.
  3. Transfer the dough to a floured surface, shape it into a thin circle, and place it on the pizza stone with olive oil drizzled on top.
  4. In a saucepan, melt butter and cook the sausage until browned, then add garlic and flour, cooking briefly.
  5. Slowly whisk in the milk and cook until thickened, seasoning with salt and pepper.
  6. Spread the sausage gravy over the pizza dough, then top with scrambled eggs, spinach, and cheeses.
  7. Bake for 10-15 minutes until the crust and cheese are lightly browned.
  8. Let cool, slice, and serve.
