Ingredients

The filling

  • ½ cucumber cucumber
  • 1 cup grape tomatoes
  • ¼ red onion red onion
  • 8 pieces kalamata olives
  • 1 Tbsp chopped parsley
  • 2 oz. feta cheese

The base

  • 4 pieces pitas
  • 1 cup hummus

The seasoning

  • 2 tsp olive oil
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  1. Dice the cucumber, slice the grape tomatoes in half, and dice the red onion.
  2. Chop the parsley and crumble the feta cheese.
  3. Spread ¼ cup of hummus on each pita.
  4. Top with cucumber, tomato, red onion, and a pinch of salt and pepper.
  5. Finish with crumbled feta, chopped parsley, and a drizzle of olive oil.
