Hummus and Fattoush Salad

Ingredients

The salad

  • ½ head Iceberg lettuce
  • ½ each red bell pepper, diced
  • ½ each seedless cucumber, in large chunks
  • 20 each grape tomatoes, cut in half
  • 5 each radishes, cut in half and sliced
  • 20 each Kalamata olives, pitted
  • ½ cup chickpeas
  • ½ cup Kidney Beans
  • 1 handful fresh parsley, coarsely chopped
  • 1 each whole wheat pita bread, cut in bite size pieces
  • 1 tsp olive oil
  • to taste salt and pepper

The dressing

  • 6 tbsp lemon juice
  • 1 tbsp olive oil
  • 2 cloves garlic
  • pinch salt
  • pinch pepper
  • pinch cumin
  • 20 leaves fresh mint
  • ¼ cup fresh parsley

Instructions

  1. Combine all salad vegetables, beans, and olives in a bowl.
  2. In a separate bowl, toss pita pieces with olive oil, salt, and pepper, then broil until golden.
  3. Add the toasted pita to the salad without mixing.
  4. Blend dressing ingredients in a food processor until smooth.
  5. Pour the dressing over the salad and mix everything together.
  6. Serve immediately.
