Ingredients

Sumac Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon sumac
  • 1 teaspoon honey
  • to taste salt

Pita Croutons

  • 2 pieces double-ply pita bread, cut into triangles
  • 3 tablespoons olive oil
  • to taste salt

Salad

  • ½ cup diced green pepper
  • 2 pieces green onions, sliced
  • 2 large on-the-vine tomatoes, diced
  • 3 pieces radishes, sliced
  • 2 pieces Persian cucumbers, sliced
  • 1 small head romaine lettuce, chopped
  • ¼ cup fresh mint, finely chopped
  • ¼ cup fresh parsley, finely chopped

Instructions

  1. Make the dressing by whisking together lemon juice, red wine vinegar, garlic, sumac, and honey in a small bowl. Slowly add olive oil while whisking until emulsified. Add salt to taste and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the pita triangles and fry for 5-7 minutes until golden brown, stirring frequently. Season with salt and remove from the pan.
  3. In a large bowl, combine the romaine lettuce, tomatoes, cucumbers, green onions, radishes, green pepper, mint, and parsley.
  4. Pour the dressing over the salad and toss to coat. Add the pita croutons just before serving and toss again.
