Ingredients

Dressing

  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon pomegranate molasses
  • 1 tablespoon ground sumac
  • to taste salt

Pita Chips

  • 2 (8-inch) pita breads, sliced in half and cut into squares
  • ½ cup olive oil, divided
  • ¼ teaspoon ground sumac
  • to taste salt

Salad

  • 1 head romaine lettuce, chopped
  • 2 large tomatoes, cored and quartered
  • 1 seedless cucumber halved and sliced
  • 1 small red onion, thinly sliced
  • 3 radishes trimmed and thinly sliced
  • ¼ cup minced fresh chives
  • ¼ cup minced fresh mint leaves
  • ¼ cup minced fresh parsley
  • to taste ground sumac for garnish

Instructions

  1. Whisk together lemon juice, olive oil, garlic, pomegranate molasses, sumac, and salt in a small bowl for the dressing and let it sit.
  2. In a skillet, heat ¼ cup olive oil and fry half of the pita chips until crispy, then transfer to a bowl.
  3. Repeat with the remaining pita chips, adding sumac and salt to taste.
  4. In a large bowl, combine romaine lettuce, tomatoes, cucumber, red onion, radishes, chives, mint, and parsley.
  5. Top the salad with fried pita chips, drizzle with dressing, and toss to combine. Garnish with more sumac if desired.
