Ingredients

Pita Croutons

  • 1 tablespoon olive oil
  • 2 pita breads pita bread
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon sumac

Dressing

  • cup olive oil
  • 2-3 tablespoons lemon juice
  • 2 teaspoons pomegranate molasses
  • 1 clove garlic
  • ¾ teaspoon sumac
  • ¼ teaspoon cumin
  • to taste salt and pepper

Salad

  • 3 heads little gem lettuce
  • 1 unit Parisian cucumber
  • 1 ½ cups halved cherry tomatoes
  • 3 units green onions
  • 1 ½ cups thinly sliced radishes
  • 2 cups chopped curly parsley
  • ¾ cups chopped fresh mint

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Brush the olive oil over the pita breads and sprinkle them with salt, pepper, and sumac.
  3. Bake for 10 minutes, flipping halfway through, then tear or cut the pita into bite-sized pieces.
  4. Whisk together the olive oil, lemon juice, pomegranate molasses, garlic, sumac, and cumin. Season with salt and pepper to taste.
  5. In a large salad bowl, toss together the lettuce, cucumber, tomatoes, green onions, radishes, parsley, mint, and pita croutons.
  6. Pour the dressing over the salad and toss to coat the ingredients.
