Ingredients

Hummus

  • 1 15-ounce can garbanzo beans
  • ¼ cup tahini
  • 3 cloves garlic
  • 1-2 medium lemons zest and juice
  • ¼ teaspoon coarse salt
  • ¼ teaspoon ground black pepper
  • ½ cup olive oil

Olive Pesto

  • 1 cup pitted Mediterranean olives
  • 1 cup flat-leaf Italian parsley
  • 1 teaspoon dried oregano leaves
  • ¼ teaspoon ground black pepper
  • ¼ cup olive oil

Crudités

  • 5-6 cups veggies
  • 2-3 rounds pita

Instructions

  1. Combine garbanzo beans, tahini, garlic, lemon zest and juice, salt, and pepper in a food processor.
  2. Pulse while slowly drizzling in olive oil until smooth, adjusting oil and seasonings as needed.
  3. In a clean food processor, blend olive pesto ingredients until a chunky paste forms.
  4. Serve the hummus in a bowl topped with pesto, alongside fresh veggies and pita wedges.
