Ingredients

The hummus base

  • cups canned chickpeas
  • ½ cup tahini paste
  • ½ cup water
  • ¼ cup extra-virgin olive oil
  • ¼ cup fresh lemon juice
  • 3 tbsp white vinegar
  • 3 cloves garlic
  • ¾ tsp salt

The olives

  • cup chopped kalamata olives
  • ¼ cup chopped green olives

Instructions

  1. Combine all ingredients except olives in a food processor and blend until smooth and creamy.
  2. Add chopped olives and pulse until incorporated without turning them to mush.
  3. Refrigerate for at least one hour before serving.
  4. Garnish with olive oil, more chopped olives, and parsley before serving.
