Garlic Butter Grilled Vegetable Pizza

Ingredients

The vegetables

  • 1 small zucchini, sliced
  • 1 small red pepper, cut into strips, seeds removed
  • 1 cup sliced mushrooms
  • ¼ cup sliced red onions
  • 1 tablespoon olive oil
  • to taste salt and pepper

The pizza base

  • 1 lb pizza dough, homemade or store bought

The toppings

  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 4 ounces fresh mozzarella cheese, torn
  • ½ cup grape or cherry tomatoes, halved
  • 3 tablespoons freshly chopped basil

Instructions

  1. Preheat the grill to high heat and brush it with oil.
  2. In a medium bowl, combine zucchini, red pepper, mushrooms, and red onion with olive oil, salt, and pepper.
  3. Grill the vegetables on a pan for about 8 minutes until tender, then set aside.
  4. Roll the pizza dough into a large oval and place it on a floured baking sheet.
  5. Mix melted butter and minced garlic, then brush the mixture over the pizza dough.
  6. Grill the pizza dough for about 2 minutes, then flip it and grill for another 2-3 minutes until golden brown.
  7. Sprinkle mozzarella cheese over the pizza, leaving a border, and top with grilled vegetables.
  8. Grill the pizza for 3-5 minutes until the cheese melts and the crust is golden.
  9. Remove from the grill and top with fresh tomatoes and basil, then cut into slices and serve.
