Ingredients

The chicken bites

  • 1 lb raw boneless, skinless chicken breast, cut into small bite-sized pieces

The spice mix

  • 1 teaspoon ground cayenne pepper
  • 2 teaspoons packed brown sugar
  • 1 ½ teaspoons all purpose flour
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder

The cooking oil

  • 1 tablespoon canola oil

Instructions

  1. Mix the cayenne pepper, brown sugar, flour, paprika, chili powder, salt, and garlic powder in a small dish.
  2. Place the chicken pieces in a zip-seal bag and add the spice mix. Seal and shake to coat the chicken.
  3. Heat the canola oil in a large skillet over medium-high heat.
  4. Add the chicken to the skillet, cooking in batches if necessary, and stir to coat in oil.
  5. Cook for 7-8 minutes, stirring occasionally to allow the chicken to brown and develop a crust.
  6. Once cooked through and browned, remove from heat and serve.
