Ingredients

Chicken Marinade

  • 4 pieces chicken drumsticks
  • 3 pieces bone-in chicken thighs
  • 2 teaspoons salt
  • to taste freshly ground pepper
  • ½ cup buttermilk

Chicken Dredge

  • 1 cup all-purpose flour
  • 1 cup Italian bread crumbs
  • ½ teaspoon salt
  • ½ teaspoon ground paprika
  • a pinch pepper
  • 3 large eggs
  • 2 tablespoons olive oil (or other oil)

Hot Chicken Sauce

  • ½ cup unsalted butter (or mild-flavored oil)
  • 1 tablespoon ground cayenne pepper
  • 1 teaspoon brown sugar
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground paprika
  • 1 teaspoon salt

Instructions

  1. Marinate the chicken in buttermilk with salt and pepper for at least 1 hour.
  2. Prepare the dredge by mixing flour, seasoned bread crumbs, and beaten eggs in separate bowls.
  3. Preheat the oven to 350°F and brush a baking sheet with oil.
  4. Coat each piece of chicken in flour, then egg, and finally bread crumbs.
  5. Place the chicken on the hot baking sheet and bake for 30 minutes on one side.
  6. Flip the chicken and bake for an additional 30 minutes.
  7. While the chicken is baking, melt the butter and mix in the spices to create the hot sauce.
  8. Brush the hot sauce over the chicken once it is done baking.
