Ingredients

Cookie Dough

  • 2 ¼ cups all-purpose flour
  • ¼ tsp salt
  • 1 cup butter, softened
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • ¼ cup strawberry jelly (or other flavor)
  • to taste sugar for rolling dough

Glaze

  • ½ cup powdered sugar
  • ½ tsp almond extract
  • 2–3 tsp water

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a medium bowl, mix together flour and salt, then set aside.
  3. In a large bowl, blend together butter, both sugars, egg, vanilla, and almond extract until creamy using a hand mixer.
  4. Slowly add the flour mixture to the wet mixture until fully combined, then let the dough chill for 1 hour.
  5. Roll about 2 tablespoons of dough into balls, roll in sugar, and place on the baking sheet, pressing down with your thumb to create a dent.
  6. Add ½ teaspoon of jelly to each thumbprint center.
  7. Bake for 12-14 minutes, then let cool for 30 minutes before glazing.
  8. Make the glaze by mixing together all glaze ingredients and drizzle over cooled cookies.
