Ingredients

The lentils

  • 2 ½ cups red or pink lentils
  • 5–6 cups water

The flavorings

  • 2 tablespoons curry paste
  • ½ cup coconut milk
  • cup water
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne
  • 2 teaspoons curry powder
  • ½ teaspoon turmeric
  • 1 teaspoon chili powder
  • 2 tablespoons sugar
  • to taste lime juice
  • to taste green herbs for garnish

Instructions

  1. Boil water in a large pot.
  2. Add lentils and cook uncovered for 10 minutes, stirring occasionally.
  3. Remove from heat and stir in remaining ingredients until well combined.
  4. Season with additional salt and garnish with herbs.
