tomato sauce

coconut milk, or more to taste

Instructions
- Heat coconut oil in a large saute pan over medium heat and cook onions, garlic, and jalapeno for 5 minutes.
- Add spices and salt, and saute for another minute until fragrant.
- Pour in the tomato sauce and let it simmer for 15 minutes until thickened.
- Gradually add coconut milk to taste and adjust flavors with maple syrup.
- Add assorted vegetables to the sauce and toss to coat.
- Cover and simmer for about 10 minutes until vegetables are crisp but fork-tender.
- Serve hot over rice or quinoa if desired.
