Vegetable Masala

Ingredients

The base

  • 1 teaspoon coconut oil or butter
  • ½ onion chopped
  • 2 cloves garlic, minced
  • 1 jalapeno chopped with seeds (about ¼ cup)

The spices

  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ½ teaspoon paprika
  • 1 teaspoon garam masala
  • ½ teaspoon salt

The sauce

  • 1 can (15 oz.) tomato sauce
  • 1 cup coconut milk, or more to taste
  • 1 tablespoon pure maple syrup

The vegetables

  • 1 lb. assorted chopped vegetables

Instructions

  1. Heat coconut oil in a large saute pan over medium heat and cook onions, garlic, and jalapeno for 5 minutes.
  2. Add spices and salt, and saute for another minute until fragrant.
  3. Pour in the tomato sauce and let it simmer for 15 minutes until thickened.
  4. Gradually add coconut milk to taste and adjust flavors with maple syrup.
  5. Add assorted vegetables to the sauce and toss to coat.
  6. Cover and simmer for about 10 minutes until vegetables are crisp but fork-tender.
  7. Serve hot over rice or quinoa if desired.
