Instructions
- Preheat the oven to 400°F or a toaster oven to 375°F.
- Cover a sheet pan with foil for easy cleanup.
- Cut the vegetables and mince the garlic and ginger.
- In a medium bowl, combine the tomato puree, spices, minced garlic, and ginger, then stir in the oil.
- Add the vegetables to the bowl and stir to coat them with the mixture.
- Spread the vegetables in a single layer on the prepared sheet pan and season with salt and pepper.
- Roast in the oven for 20 minutes or until cooked to your liking.
