Ingredients

The vegetables

  • 8 ounces cauliflower
  • 6 ounces green beans
  • 4 ounces whole mushrooms

The masala

  • ½ cup tomato puree
  • 2 tablespoons olive oil, ghee, or melted butter
  • 2 teaspoons fresh ginger, minced
  • 1 clove garlic, minced
  • ½ teaspoon chile powder
  • ¼ teaspoon garam masala
  • ¼ teaspoon turmeric
  • to taste salt and pepper

The garnish

  • to taste sliced green onion
  • to taste chopped cilantro
  • to taste Siracha (optional)

Instructions

  1. Preheat the oven to 400°F (or toaster oven to 375°F) and prepare a sheet pan with foil.
  2. Cut the vegetables and mince the garlic and ginger.
  3. In a medium bowl, combine the tomato puree, spices, minced garlic, and ginger, then mix in the ghee or oil.
  4. Add the vegetables to the bowl and stir to coat them with the sauce.
  5. Spread the vegetables in a single layer on the prepared sheet pan and season with salt and pepper.
  6. Roast in the oven for 20 minutes or until the vegetables are cooked to your liking.
  7. For an alternate cooking method, sauté the vegetables in a pan with oil, then add the tomato sauce and spices until cooked.
