Instructions
- Preheat the oven to 400°F (or toaster oven to 375°F) and prepare a sheet pan with foil.
- Cut the vegetables and mince the garlic and ginger.
- In a medium bowl, combine the tomato puree, spices, minced garlic, and ginger, then mix in the ghee or oil.
- Add the vegetables to the bowl and stir to coat them with the sauce.
- Spread the vegetables in a single layer on the prepared sheet pan and season with salt and pepper.
- Roast in the oven for 20 minutes or until the vegetables are cooked to your liking.
- For an alternate cooking method, sauté the vegetables in a pan with oil, then add the tomato sauce and spices until cooked.
