Ingredients

Masala Spice Mix

  • 2 Tbsp garam masala
  • ½ tsp cumin
  • ½ tsp turmeric
  • ½ tsp smoked paprika
  • ¼ tsp cayenne
  • ½ tsp salt
  • to taste freshly cracked pepper

Skillet Ingredients

  • 1 each yellow onion
  • 3 cloves garlic
  • ½ Tbsp grated fresh ginger
  • 2 Tbsp olive oil
  • 12 oz frozen cauliflower florets
  • 1 15 oz can chickpeas, drained
  • 1 15 oz can tomato sauce
  • ¼ cup water
  • cup heavy cream
  • to taste salt

Instructions

  1. Combine the spices for the masala spice mix in a small bowl.
  2. Finely dice the onion, mince the garlic, and grate the ginger.
  3. Sauté the onion, garlic, and ginger in olive oil over medium heat until the onions are soft.
  4. Add the spice mix and sauté for an additional minute.
  5. Add the frozen cauliflower florets and sauté until thawed and coated in spices.
  6. Stir in the drained chickpeas, tomato sauce, and water, then simmer for about 15 minutes.
  7. After simmering, stir in the heavy cream and adjust salt to taste.
  8. Serve over rice or with bread for dipping.
