Instructions
- Heat ghee in a large pot over medium/high heat.
- Add sweet potatoes and sauté for 6-8 minutes, stirring occasionally.
- Add onion and cauliflower, cooking for an additional 2-3 minutes.
- Mix in the remaining ingredients and bring to a boil.
- Reduce heat to low and let simmer for 15-20 minutes.
- Serve over brown rice and enjoy.
