Ingredients

The base

  • 2 tablespoons ghee
  • 2 large sweet potatoes
  • 1 medium yellow onion
  • 1 large head cauliflower
  • 15 oz. canned full-fat coconut milk
  • 15 oz. canned tomato sauce
  • 15 oz. canned garbanzo beans
  • 10 oz. frozen English peas

The spices

  • 2 tablespoons garam masala
  • 1 teaspoon ground ginger
  • 1 teaspoon turmeric
  • teaspoon cayenne pepper
  • ½ teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground chipotle powder
  • 6 cloves garlic
  • 1 tablespoon maple syrup

Instructions

  1. Heat ghee in a large pot over medium/high heat.
  2. Add sweet potatoes and sauté for 6-8 minutes, stirring occasionally.
  3. Add onion and cauliflower, cooking for an additional 2-3 minutes.
  4. Mix in the remaining ingredients and bring to a boil.
  5. Reduce heat to low and let simmer for 15-20 minutes.
  6. Serve over brown rice and enjoy.
