Instructions
- Marinate the cauliflower by tossing it with coconut milk and spices, then let it sit for at least 15 minutes.
- Heat oil in a pan over high heat and char the marinated cauliflower on all sides for about 5 minutes, then set aside.
- In the same pan, heat the remaining coconut oil and sauté the onions until translucent.
- Add the spices to the onions and cook until fragrant, about 30 seconds.
- Stir in the coconut milk and tomato paste, bring to a boil, then simmer for 5 minutes until thickened.
- Add the charred cauliflower to the sauce and simmer for an additional 5 to 10 minutes.
- Squeeze lime juice over the dish, adjust seasoning if needed, and serve.
