Ingredients

Marinated Cauliflower

  • ½ teaspoon garam masala
  • ¼ teaspoon ground ginger
  • ¼ teaspoon Indian chili powder
  • ¼ teaspoon curry powder
  • 1 medium head cauliflower, cut into florets
  • 2 tablespoons coconut milk
  • 3 teaspoons coconut oil

Vegan Butter Sauce

  • tablespoons coconut oil
  • 1 small onion, diced
  • 1 tablespoon garam masala
  • ½ teaspoon Indian chili powder
  • ½ teaspoon ground black pepper
  • 1 teaspoon curry powder
  • 1 teaspoon sea salt
  • 14 ounce coconut milk
  • 6 ounce tomato paste
  • 1 tablespoon lime juice

Instructions

  1. Marinate the cauliflower by tossing it with coconut milk and spices, then let it sit for at least 15 minutes.
  2. Heat oil in a pan over high heat and char the marinated cauliflower on all sides for about 5 minutes, then set aside.
  3. In the same pan, heat the remaining coconut oil and sauté the onions until translucent.
  4. Add the spices to the onions and cook until fragrant, about 30 seconds.
  5. Stir in the coconut milk and tomato paste, bring to a boil, then simmer for 5 minutes until thickened.
  6. Add the charred cauliflower to the sauce and simmer for an additional 5 to 10 minutes.
  7. Squeeze lime juice over the dish, adjust seasoning if needed, and serve.
