Curry Cauliflower

Ingredients

The cauliflower

  • 1 large head cauliflower

The seasoning

  • 2 Tbsp. extra virgin olive oil
  • ½ tsp. sea salt
  • 2 tsp. curry powder
  • ½ tsp. harissa
  • tsp. cumin

For serving

  • to taste plain yogurt
  • to taste cilantro
  • to taste toasted cashews

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. In a saucepan with a steamer basket, bring water to a boil and steam the cauliflower for 5 minutes.
  3. Transfer the steamed cauliflower to the prepared baking sheet.
  4. In a small bowl, mix the olive oil, sea salt, curry powder, harissa, and cumin, then drizzle over the cauliflower and toss to coat.
  5. Bake for 15 minutes, stir, then bake for another 15 minutes until the cauliflower is charred on the edges.
  6. Taste and adjust seasoning with salt, then serve with yogurt, cilantro, and toasted cashews.
