Roasted Curried Cauliflower

Instructions
- Preheat the oven to 450°F with the rack in the lower middle position.
- Toss the cauliflower florets in a large bowl with the oil and curry powder, adding salt and pepper.
- Arrange the seasoned florets on a parchment-lined baking sheet, cover with foil, and roast for 15 minutes.
- Remove the foil and roast for an additional 20 minutes, flipping the florets halfway through.
- Check that the cauliflower is tender inside and browned outside.
- Transfer to a serving platter, drizzle with lime juice, and sprinkle with cilantro if desired.
