Roasted Curried Cauliflower

Ingredients

The cauliflower

  • 1 large cauliflower head, cut into uniform florets

The seasoning

  • 3 tablespoons avocado oil, melted coconut oil, extra virgin olive oil, or melted ghee
  • 3 tablespoons Madras curry powder
  • to taste none Diamond Crystal Kosher salt
  • to taste none freshly ground black pepper
  • 1 tablespoon freshly squeezed lime juice (from ½ lime)
  • ¼ cup minced cilantro leaves (optional)

Instructions

  1. Preheat the oven to 450°F with the rack in the lower middle position.
  2. Toss the cauliflower florets in a large bowl with the oil and curry powder, adding salt and pepper.
  3. Arrange the seasoned florets on a parchment-lined baking sheet, cover with foil, and roast for 15 minutes.
  4. Remove the foil and roast for an additional 20 minutes, flipping the florets halfway through.
  5. Check that the cauliflower is tender inside and browned outside.
  6. Transfer to a serving platter, drizzle with lime juice, and sprinkle with cilantro if desired.
