Curry Roasted Cauliflower

Instructions
- Preheat the oven to 400ºF.
- Remove the leaves and stem from the cauliflower and cut it into bite-sized florets.
- Rinse the florets under cool water and drain well.
- Slice the onion into strips.
- Spread the cauliflower and onion on a baking sheet and drizzle with olive oil.
- Sprinkle curry powder, red pepper flakes, salt, and pepper over the vegetables and toss to coat.
- Roast in the oven for 45 minutes, stirring halfway through.
- Thaw the frozen peas while the cauliflower is roasting.
- Remove the cauliflower from the oven, add the peas, and toss to combine.
- Serve warm.
