Curry Roasted Cauliflower

Ingredients

The vegetables

  • 1 head cauliflower
  • ½ large red onion
  • ½ cup frozen peas

The seasonings

  • 2 Tbsp olive oil
  • ½ Tbsp curry powder
  • ¼ tsp crushed red pepper
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400ºF.
  2. Remove the leaves and stem from the cauliflower and cut it into bite-sized florets.
  3. Rinse the florets under cool water and drain well.
  4. Slice the onion into strips.
  5. Spread the cauliflower and onion on a baking sheet and drizzle with olive oil.
  6. Sprinkle curry powder, red pepper flakes, salt, and pepper over the vegetables and toss to coat.
  7. Roast in the oven for 45 minutes, stirring halfway through.
  8. Thaw the frozen peas while the cauliflower is roasting.
  9. Remove the cauliflower from the oven, add the peas, and toss to combine.
  10. Serve warm.
