Two-Salmon Tartare

Ingredients

The fish

  • 450 g fresh skinless salmon fillet
  • 150 g smoked salmon

The mixture

  • ¼ cup paleo mayo
  • ¼ cup extra-virgin olive oil
  • ¼ cup fresh parsley, chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp chopped green olives
  • 2 tbsp capers, chopped
  • 1 tbsp caper brine
  • 1 tsp Dijon mustard
  • ¼ tsp freshly cracked black pepper
  • ¼ tsp cayenne pepper

Instructions

  1. Cut the fresh and smoked salmon into small cubes.
  2. Mix the salmon with the other ingredients in a bowl until well combined.
  3. Cover the mixture with plastic film and refrigerate for about 2 hours.
  4. Divide the mixture into 4 equal servings and press each into a round cookie cutter.
  5. Remove the cookie cutter carefully.
  6. Garnish with fresh herbs and a drizzle of olive oil if desired.
  7. Serve immediately with crunchy accompaniments.
