Two-Salmon Tartare

The fish

The mixture

Instructions
- Cut the fresh and smoked salmon into small cubes.
- Mix the salmon with the other ingredients in a bowl until well combined.
- Cover the mixture with plastic film and refrigerate for about 2 hours.
- Divide the mixture into 4 equal servings and press each into a round cookie cutter.
- Remove the cookie cutter carefully.
- Garnish with fresh herbs and a drizzle of olive oil if desired.
- Serve immediately with crunchy accompaniments.
