Salmon Salad

Ingredients

The Salmon

  • 4 6-oz Salmon fillets
  • 3 tbsp Olive oil
  • 1 tsp Sea salt
  • ½ tsp Black pepper

The Dressing

  • ½ cup Mayonnaise
  • 2 tbsp Lemon juice
  • 1 tsp Dijon Mustard
  • 2 tbsp Fresh dill (chopped)
  • ½ tsp Smoked paprika

The Salad

  • 1 large Bell pepper (diced finely)
  • ¼ large Red onion (diced finely; ~1/2 cup)
  • 1 cup Cucumbers (diced finely)
  • to taste optional Black pepper
  • to taste optional Sea salt

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Place the salmon fillets in a baking dish and pat them dry.
  3. Brush both sides of the salmon with olive oil and season with salt and pepper.
  4. Bake for 10-15 minutes until the salmon flakes easily with a fork. Let it cool to room temperature.
  5. In a small bowl, whisk together the dressing ingredients: mayonnaise, lemon juice, Dijon mustard, dill, and smoked paprika.
  6. In a large bowl, combine the diced bell peppers, red onions, and cucumbers.
  7. Once the salmon has cooled, flake it with a fork and add it to the bowl with the other salad ingredients.
  8. Pour the dressing over the salad and mix gently, adjusting salt and pepper to taste.
