Instructions
- Preheat the oven to 400°F (204°C).
- Place the salmon fillets in a baking dish and pat them dry.
- Brush both sides of the salmon with olive oil and season with salt and pepper.
- Bake for 10-15 minutes until the salmon flakes easily with a fork. Let it cool to room temperature.
- In a small bowl, whisk together the dressing ingredients: mayonnaise, lemon juice, Dijon mustard, dill, and smoked paprika.
- In a large bowl, combine the diced bell peppers, red onions, and cucumbers.
- Once the salmon has cooled, flake it with a fork and add it to the bowl with the other salad ingredients.
- Pour the dressing over the salad and mix gently, adjusting salt and pepper to taste.
