Ingredients

The salmon

  • 4 filets salmon
  • ½ tablespoon olive oil
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

The dressing

  • ½ cup olive oil
  • ¼ cup lemon juice
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon garlic powder

The salad

  • 6 cups romaine lettuce
  • 1 cup cucumber
  • ½ cup red onion
  • 1 cup cherry tomatoes
  • 2 avocados sliced
  • ¼ cup fresh dill
  • ½ cup Kalamata olives
  • 1 cup feta cheese

Instructions

  1. Preheat the oven to 425°F.
  2. Place the salmon filets in a baking dish, drizzle with olive oil, and sprinkle with salt and black pepper.
  3. Bake the salmon for 8-10 minutes.
  4. In a bowl, combine all dressing ingredients and whisk to mix well.
  5. Assemble the salad by placing all salad ingredients on a plate, top with the baked salmon filets, and serve with dressing.
