Ingredients

The salmon

  • 4 filets salmon
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 teaspoons cumin
  • 2 teaspoons chili powder
  • 1 lime for garnish

The avocado salsa

  • 1 whole avocado
  • 1 cup cucumber
  • ½ jalapeno finely chopped
  • ¼ cup cilantro
  • 1 lime juice and zest
  • 2–3 teaspoons olive oil
  • ½ teaspoon salt

The creamy yogurt dressing

  • ½ cup plain Greek yogurt
  • 1 lime juice
  • 1 clove garlic
  • 1 tablespoon olive oil
  • cup cilantro
  • ½ teaspoon salt
  • ½ teaspoon pepper

The greens

  • 3-4 heads little gem lettuces or baby romaine

Instructions

  1. Preheat the grill to medium.
  2. Mix salt, pepper, chili powder, and cumin to create a spice rub and coat the salmon.
  3. Prepare the salsa by mixing all ingredients except avocado, then gently fold in the avocado.
  4. Whisk together all dressing ingredients in a small bowl.
  5. Quarter the lettuce and set aside.
  6. Grill the salmon for a few minutes on each side until cooked to desired doneness, squeezing lime juice over it.
  7. Assemble the salad by tossing the lettuce with some dressing, placing it on a plate, topping with salmon and salsa, and serving with lime wedges.
