Ingredients

Grilled Salmon

  • 4 filets salmon (4-6 ounces each)
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 lime juiced
  • 1 tablespoon avocado oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

Mango Salsa

  • 1 cucumber diced
  • 1 mango diced
  • ½ cup cilantro (chopped)
  • ½ jalapeno pepper seeded and diced
  • 1 clove garlic (mashed)
  • ½ cup red onion (chopped)
  • 1 lime juiced
  • to taste salt and pepper

Instructions

  1. Prepare the salsa by chopping all salsa ingredients and mixing them in a bowl. Season with salt and pepper, then refrigerate to marinate.
  2. Mix garlic powder, chili powder, salt, and pepper in a small bowl for the salmon seasoning.
  3. Rub salmon filets with avocado oil, then coat with the seasoning mixture.
  4. Heat a greased cast iron skillet over medium heat.
  5. Place salmon filets skin side down in the skillet and cook for about 6 minutes.
  6. Flip the salmon filets and cook for another 5-6 minutes until done to your liking.
  7. Plate the salmon, drizzle with lime juice, and top with mango salsa. Add additional salt and pepper if needed.
